Last weekend I made this delicious meal for my family. It's really easy and versatile because you can use any type of protein that you want. You could even make it vegetarian with plant-based meats or tofu. So I thought I would share it with you!
Korean Style Beef (or your choice of protein) over rice
1/2 cup brown sugar
1/2 cup soy sauce
2 1/2 tablespoons soda water
1 green onion
1 garlic clove
1/2 teaspoon black pepper
2 lbs protein of your choice (I used ground sausage)
1 1/2 cups Jasmine rice
Cucumber Salad:
1 English cucumber
1 green onion
1 garlic clove
1/2 teaspoon red pepper flakes
1 teaspoon sugar
1/2 teaspoon rice vinegar
1/2 teaspoon sesame oil
1/2 teaspoon salt
For Serving:
Steamed rice
1 teaspoon green onion
1 1/2 tablespoons toasted sesame seeds
Marinate your protein in a gallon freezer bag for at least an hour with brown sugar, soy sauce, soda water, green onion, garlic & pepper. The longer you marinate the more flavorful it will be.
Cut the cucumber into cubes and add to a bowl along with green onion, garlic, red pepper flakes, sugar, rice vinegar, sesame oil, and salt.
Once the meat has marinated, add to a hot skillet with 1 tablespoon olive oil. Cook to desired doneness. Serve over steamed rice alongside cucumber salad. Top with green onion and toasted sesame seeds.
